Consolation Meals: Do-it-yourself Soup For The Soul

November 9th, 2011 by Chef Luc

Nicely, the kiddies are back to highschool, the leaves are starting to flip yellow, we are harvesting our backyard, the air is cool at night time and it's September the 1st. To me that looks like fall and time for home made soup!

Now, normally the considered summer season ending would make me sad, but not this year. It was a kind of unhealthy summers you simply want to see it end. Plus it was so cold, we do not even really feel like we had summer. So bring on the fall! Embracing the season wholeheartedly and hoping for an extended heat one! The first thing I am doing is checking my pantry. This is an Organizing Tip: Keep your soup-making elements collectively in your pantry. Additionally I am combing by my soup recipes.

There was nothing like returning residence from an extended faculty-bus journey (one hour long) to the aroma of mother's selfmade soup simmering on the stove. It was so scrumptious, particularly with all of the contemporary greens from the garden. Or make a pot if you end up having firm coming. After sitting in a car all day, there is nothing extra warming than a bowl of soup and biscuits. It actually is consolation food.

However as I watch what is occurring on the earth state of affairs economically, soup is also an effective way to stretch your budget. You can also make a nutritious meal for your loved ones on pennies. Maybe that is one motive why mom made soup, to feed her family of 9. But it felt as if we have been eating like kings.

One of my soup recollections occurred at one among our household reunions in December. It was cold and we were making soup to function each member arrived. We heard the automobile pull up and shut the range off to go out and greet my sister and family. Later we may smell one thing burning. Oh no! The soup!

Somewhat than turn the stove off, we turned it on High! We were going to throw it out, but one customer and good friend refused to waste it and thought it potential to be salvaged. She tenaciously began including spices and herbs, however it still tasted burnt. So she stored adding elements from the fridge, so much that the soup now stretched into 2 pots, after which 3. Lastly she did it. She salvaged that soup, and it was the perfect ever!

I used to be young and wished I paid more consideration to what she did, and my mother isn't alive to ask her, however I believe her secret was to make use of potato, then throw the potato out. Plus, she transferred the soup to a different pot and discarded the burnt part. I would love to try it out, however then I would have to burn a pot of soup..... Nah! So we'll simply should go together with my memory....

Also, when we first moved to British Columbia, we decided to drive to Alaska, simply to have seafood. We had been in Haynes and there I had the very best Seafood Chowder I had ever eaten. So I asked the waitress if they give out the recipe. She mentioned she would ask the cook, and he said "sure."

I needed to meet him the next day and he gave me a sheet of paper with the recipe which went one thing like this:

"Cook dinner and drain 50 pounds of potatoes, then in 2 pounds of butter cook dinner 2 pounds of onions diced, 1 pound of celery....... and season to taste." He might have just said no, it is a secret! But that didn't stop me. The challenge was on to see if I might repeat his recipe... and we did. I promise to share that with you, however I would like to take photos for you. I promise I won't forget.

How about when you find yourself sick? Nothing like a pot of selfmade hen soup. We prepare dinner up a pot with 12 complete garlic cloves. You can't inform there may be that much garlic, and you at all times feel better after a bowl.

Don't you simply love Mulligatawny Soup with apples and curry? Or a favorite that Ken's mom made was Corn Chowder with ham. My private favourite is Turkey, I really like turkey and may eat all of it week, after which move into turkey soup with my contemporary chopped dill, barley and cabbage. Have you ever made stew after which served it in hollowed out bread bowls? That is fun. I make a 2 pound loaf of French Bread in my bread machine, take out the dough and form it into 3 balls, let rise and baked. Minimize in half, scoop out the flesh and serve your stew contained in the bowl.

To get you into the temper of constructing soup, simply reduce up some onion and celery and start sautéing in a pan. You will see everybody come operating eager to know what smells so good. Then begin including veggies, broth and no matter is in your fridge. I really like including cabbage to soup, to me it is the secret ingredient to a terrific selfmade soup. Or make Hamburger Soup, Split-Pea, Beer Stew, French Onion Soup or Fish Chowder. I love so many, it can be laborious to decide which one to make.

But I've a recipe you doubtless NEVER heard of before. This was Ken's invention with growing up north and is the perfect resolution to tough financial times. Do not let the identify make you turn your nose, his soup is excellent and he is widely known for this creation..... Wiener Soup. We might even call this Recession Soup! Ken mainly throws in no matter is in the fridge, however by no means anything green. Here is the Recipe:

Recession Soup

1 1/2 cups Onion, diced
1 cup Cabbage, sliced thin
1 cup Carrots, diced
2 cloves Garlic, minced
Celery - about 1.5 cups
5 cups Water, Beef or Chicken Inventory
1 Massive can of Tomatoes, diced
1 cup Yellow Beans
1 tsp. Salt
1 tsp. Pepper
1 tsp. Worcestershire Sauce
half tsp. Tabasco Sauce
1 cup Corn
1 cup Potatoes (add if you add the pasta)
1 cup Macaroni (or Pasta of your choice)
And naturally - Wieners. As much as a dozen, I had 5 on hand.

Directions:

In a large pot or Dutch Oven, sauté onions, celery, cabbage and garlic in Canola Oil. Add the rest of the components up to Worcestershire Sauce and simmer till tender. Then add potatoes, pasta and corn and prepare dinner until virtually done. Add lower up wieners and heat till they are puffed. Belief me - this soup is yummy, it has a bit of spiciness. While you sit right down to eat, and there is a knock at the door, simply add another cup of water. Take pleasure in!
